Spain visits the restaurant at Tranholmen.
The travel company TEMA came to visit and I served them a Pluma, that is, a nice piece from the shoulder of the Iberico pig. The Iberico pig is usually associated with the air-dried ham Pata Negra, which means the black foot, as the pigs are black or black-spotted. They live freely in areas such as southern Spain where there are plenty of oak groves, which means that the pig eats acorns that give the meat a really good flavor.
With the meat I served grilled peppers to add sweetness to the salty meat and for acidity I grilled lemon which we squeezed over the meat. Three flavors in a nice balance. The meat does not need more than a little salt and pepper before frying, the nutty flavors in it and the fine marbling make it absolutely delicious without adding a lot of spices.
Fantastic that TEMA came to visit our restaurant at home when they were looking for something genuine in Stockholm. My best travel tip is to look for the genuine, both in Spain and other countries, to get the best dining experience. Try to get away from the tourist traps and find the genuine, that's when you can be surprised, and find something unexpected and really, really good.
