ELLE Food and Wine magazine came to visit and we talked history, stubbornness and Cuba.

I got my inspiration about a restaurant at home from Cuba and their equivalent called "paladar". As ELLE writes, many people advised me not to try it in Sweden because we have rules and laws about food in a completely different way than in Central America. Just failing to get a liquor license could ruin the whole idea. But that's what's really fun about trying something new, and challenging the boundaries we have. To say that it went like clockwork all the time is perhaps an exaggeration, but we succeeded!
